The cultivation of the vine is very important in the economy of the Canary Islands since the 15th century, reaching between the 16th and 17th centuries a predominant role in the economy of the islands. Because of its fame, the Canarian wines crossed the borders of Spain to serve in Europe and in the Spanish and Portuguese colonies of America and Africa. The oldest indications date from 1497, when the conquered lands are distributed. Don Fernando de Castro was awarded the lands that first housed vine crops, being then when the first Breton and Portuguese families arrived in the Canary Islands who chose the North of Tenerife as a place of settlement. The agriculture and more specifically the elaboration of the agricultural products, exerted a great influence in the development of the machinery of the classic times, being the Winery Canarian peak result of the evolution of the presses of beam used by the Greeks.

Almost all the wineries of these characteristics constitute true handicrafts, adopting in the Canary Islands the long Canarian denomination to the place where the grapes are stepped on. The winery is composed of a large container constructed of rectangular-shaped wood, within which the grapes are pressed for later pressing by means of a lever formed by a heavy beam, of thick and very long wood supported by one end so that it can move freely. The mechanical parts of the winery are made up of the wooden beam of about 90 cm in diameter and about 15 meters long and the Roman scale made up of stone, spindle and mace. The stone, with a truncated shape, with very little inclination, is the force of application on the lever. The spindle is a large wood-carved screw of approximately 3 meters in length and a diameter of 20 centimeters that rests on the stone. The hub is the nut where the spindle is screwed. On the other hand, there is an artificial pond or pool to which the juices for fermentation are conducted.
